Description
Heza Washing Station sits at nearly 2,000 meters above sea level in the remote hills of Burundi’s Kayanza province, reached by switchbacking mountain roads and hand-built log bridges. Its name means “beautiful place” in Kirundi, and with panoramic views and an ever-changing East African sky, it earns it. The surrounding hill of Gitwe is home to a close-knit community of coffee farmers who grow Bourbon alongside onions, sweet potato, maize, and banana in the region’s rich soils.
Fresh spring water from a nearby natural source is used throughout processing. Cherries are hand-sorted on arrival, pulped, and fermented for 36 hours before being rinsed, graded by density, and moved to covered pre-drying tables for careful defect sorting. From there the parchment transfers to traditional raised beds, where it dries slowly for 16 to 20 days until it reaches ideal moisture.
