Finca Chambakú Is owned and managed by father and son Elmer and Felipe, Elmer has more than 45 years of coffee experience and is considered a visionary in Colombian coffee. With Elmers experience and Felipes knowledge and love of fermentations / innovation these coffees are one of a kind.
This Pink Bourbon undergoes 80 hours of fermentation. First the Cherries are oxidized for 16 hours then 64 hours anaerobically with lactic bacterias and yeast. Dried on African style beds for 14 days.
