An intense and very unique delicacy, Bottarga is not a traditional caviar, but rather the pressed, salt-cured and sun-dried roe of the grey mullet, presented as hard, solid paste. Bottarga kosher caviar has been produced since the ancient Egyptians, and it’s now a Mediterranean staple. Salty and briny, bright orange Bottarga kosher caviar brings a great intensity to many dishes, whether shaved over flatbread with a drizzle of olive oil grated over pasta and risotto, or sliced over salads. Use a microplane or mandolin to shave perfect bottarga slices.
