The Winter Ambrosia Vinegar was specifically made for Pasolivo by a neighboring Central California Coast artisanal vinegar maker. This seasonally available blend gets its mellow, sweet flavor from hand-picked organic apples and pears that are grown directly on the vinegar maker’s property.
With hints of apple pie, this is a wonderful addition to chicken salad or fresh baby spinach salad, especially when paired with our robust, peppery Pasolivo Extra Virgin Olive Oil. Try using it in a brine for your Thanksgiving turkey and in marinades for roast pork loin. We also love the brightness of this sweet vinegar in a simple cocktail of seltzer water and gin.
